Fresh Green Salad and Toppings

We all love salads here in our home. Even Isaac, Caleb, and Lucy Lillie will eat lettuce, which totally amazes me still.
We have come to have a regular selection of salad toppings for our salads. With the exception of Matt, who only eats cheese and sunflower seeds on his salad, most of these toppings are liked by all.
Lettuces
We use Green Leaf Lettuce mainly. Some of our other faves include: Red Leaf Lettuce, Spinach, and Earthbound Farms Organic Spring mix. We only get it, though, when it is 1/2 off at Kroger. The ingredients in that are: Red & green romaine, red & green oak leaf, lollo rosa, and tango lettuces get a little kick from mizuna, arugula and radicchio. It says that the ingredients vary, and ours did include dandelion greens. I guess we can section a part of the yard of this summer to keep free from animals this summer and pick those ourselves.
Our fave toppings:
*dried cranberries or golden raisins
*sunflower seeds
*cottage cheese
*shredded sharp cheddar cheese
*onions
*pepperoncini
*frozen peas, thawed
*fresh lime or lemon squeezed onto the salad or into the vinaigretteWe also love tomatoes, cucumbers and carrots, but we usually have the cukes and carrots by themselves for a snack. Fresh squash is also very good, such as zucchini, longneck, etc.
Dressings
For dressings, we use Ranch Dressing or a homemade vinaigrette. Those are just what we have gotten used to. Really, I don’t care for Ranch, and we didn’t ever buy it until our children were old enough to have an opinion!
Honey-Herb Vinaigrette
1/2 cup olive oil
1/4 cup apple cider vinegar
1 clove of garlic
1 tablespoon cup onion
1 tablespoon honey
Pinch of salt, rosemary, red pepper, and black pepper*fresh lime or lemon squeezed onto the salad or into the vinaigrette
Isaac’s funny. He likes both the Ranch and the vinaigrette on his salad together.
Though LucyLillie (23months) does eat the lettuce cut into tiny pieces, I have found that it is easier to give her this salad mixture instead. Sometimes she gags on the lettuce. This is what we give her a mixture of:
cottage cheese
sunflower seeds
shredded cheese
cranberries or raisins cut or torn into small bits
We have been putting a garden salad on the menu before the meal as often as we can, because it is just so healthy. I can’t wait to go and pick our salad fixin’s right out of our own garden again!

We love salads, too. Occasionally, I like banana peppers, black olive and chow mein noodles. Like you, I strongly prefer green leaf and I *love* the spring mix — with a little crumbled bleu or feta cheese.

I love sliced strawberries or apples on salad. I also like feta or blue cheese;) , green onion, walnuts are yummy too:)

I have been mixing some bleu cheese dressing with my vinaigrette lately, so the feta sounds great.
As a matter of fact, a Waldorf Salad sounds great too!
I love apples in a waldorf salad, Lizzie. That sounds interesting – delicious – on a salad. Not sure about strawberries, but it’s worth a try!
I prefer green olives to black, and haven’t had chow mein noodles in a long time. Love those too. I much prefer them to croutons.
Ahhh yes… we call the banana peppers “pepperoncini” – we love those!

Hi Jacque,
I also love salads and we get an organic lettuce in our salad box which is delivered everyweek. I love to add grated carrot, cucumber, tomatoes and whatever else we have on hand in the fridge. DH is not overly keen on salads even in the summer but he will tolerate them occasionally. I normally just add a lemon dressing to the salad and it is yummy.
