Recipes for Seasonal Beverages

My friend Michelle tweeted that she was out of Egg Nog, and I was boo hoo-ing with her, because we don’t have any either! Then I remembered that I do have a yummy recipe from years ago for Egg Nog from scratch! When I looked in my recipe book I found several yummy winter drinks I used to make.

We used sugar then, but now I try to substitute honey for all we can. I think the honey will work great in the nog as well as the cocoa, if we serve it right away.

Egg Nog

*makes about 16 servings

Beat until very thick:

6 egg yolks
1/4 c. sugar
3TBS rum extract
1tsp. vanilla

*add gradually and continue to beat until blended:

1 1/2c. cream

*beat until frothy:

6 egg whites

*add gradually and beat well after each addition until peaks form:

5TBS sugar

*Gently fold egg whites into egg yolk mixture until blended.

*Chill in refrigerator

To serve, pour into punch bowl and mix gently. Ladle into serving cups and sprinkle lightly with nutmeg.

I took six years of French in high school and college, and I found this amusing when I looked up Egg Nog: “its French name lait de poule (literally “milk of hen”).”

Hot Cocoa Mix

1c. powdered sugar
3 c. powdered milk
1 1/4 c. cocoa

Sift all ingredients together and put into a decorative container.
To make Hot Cocoa: Add 4TBS of mix to 1 c. boiling water.
May be set on your counter or given as a gift!

Vanilla Latte

*makes 6 -3/4c. servings

3c. milk

2tsp vanilla extract

2c. freshly brewed strong coffee, any flavor

Heat milk in a saucepan until warm, stirring briskly and constantly with a whisk to create a foam.

Remove from heat, stir in vanilla. Stir coffee into milk.

Serve immediately.

Spiced Cranberry Drink

This recipe called for the cranberry Juice Cocktail, but it is mostly sugar then. I would prefer to use honey to sweeten.

32. oz Cranberry Juice
1 tsp. whole cloves
1 cinnamon stick

Add honey to sweeten.

Let simmer for 10minutes and serve warm.

I sure hope we have enough eggs in the fridge to make some of our own egg nog!

    Merry Christmas Jacque!

    I have had eggnog making on my list for the last couple of weeks. Maybe now that Christmas is over and things are going to settle down a bit I can make some. We usually have eggnog (most of the time its store bought) for New Year’s Eve.
